So goodness knows this blog isn’t political-after all everyone needs to eat no matter what your political leaning. And we love all of our friends and viewers regardless. But that’s not to say that Holly and I don’t have very strong views and opinions (and luckily we agree). The last few months have made it very clear that much needs to be done to bring us together as a country and to heal us as a nation. The big disagreement seems to be in exactly how to do this. We need to find common ground and we may need to start small. Truly though, I think we can all agree that anything that limits our access to avocados is a bad plan. A bad plan indeed. This Avocado Toast with Bacon and Sriracha will show you just how bad of a plan…
Common ground can be found with this Avocado Toast with Bacon and Sriracha. It is the simplest, quickest treat I’ve had in a long time. I was recently at Holly’s hanging out with her and her new baby and she served an avocado toast with sea salt for lunch with her fabulous Chipotle and Stout Chili. I had forgotten just how perfect of a treat it was! Seemed like avocado toast was something I could work with! I went home and scavenged up some avocados, found some leftover bacon in the refrigerator from the last time I made Bacon and Egg Breakfast Pizza, got out a bottle of sriracha I keep on hand at all times and some course sea salt I keep around for making THE BEST CHOCOLATE CHIP COOKIE EVER (from Ashley Rodriguez of Not Without Salt-and yes, that title DESERVES an all capital letter status!).
With this rag-tag assortment of ingredients I was able to build a creamy-spicy-salty-herby avocado toast which I have since made every day since going to Holly’s. In fact I had to send my husband to Costco for more avocados today (here’s to hoping they ripen quickly). This is so easy it feels like cheating!
So really, I am against any policy that is going to limit my access to avocados. And tequila… (but that is a post for another day).
- 2 slices of your favorite bread
- 1 ripe avocado
- 1 slice of bacon, cooked and chopped
- 1 teaspoon of cilantro, chopped
- Sriracha to taste
- Coarse sea salt to taste
- Toast the slices of bread in a toaster.
- Slice avocado in half and remove the pit.
- Using a fork, smash the avocado (this can be done while still in the peel).
- Scoop the smashed avocado out of the peel of one half of the avocado and spread on toasted bread.
- Repeat with other half of avocado, scooping it onto the second piece of toasted bread.
- Drizzle sriracha to taste over the avocado.
- Sprinkle bacon, cilantro and sea salt over the two slices of toast.
- Eat and enjoy!
So much has happened since I initially wrote this post. I will reiterate that we are not a political blog and I’m not definitely not looking to debate political ideology. However I am quite aware that the current political climate is no laughing matter, and I’m certainly not kidding about finding some common ground. Let’s pledge to work towards that goal. Let’s agree to be kind and respectful. Sometimes it’s as simple as sharing a meal with a friend or neighbor! Choose peace. Choose unity. Choose love.
