Does anyone else feel like you are on a crazy carnival ride you can’t get off of? Between work and driving the kids to their million activities and trying to keep the house relatively organized, I’m exhausted. We had been hitting more fast food drive throughs as I would race home from work, pick the kids up from one activity and shuttle them to the next. I bet a lot of you feel exactly the same way I did! Dinner…we needed something quick. We needed something simple. We needed something worth eating. I came up with a solution: Maple Mustard Salmon.
Both of my kids love salmon. They will choose it before many other foods, likely because I have been feeding it to them since they were very young. But until a couple of years ago, I’d been buying frozen salmon (usually even preseasoned). What the what? Why? I think I just didn’t know better! (And shhhh….don’t tell, seafood intimidates me!)
Becoming friends with the butcher behind the meat and seafood counter at my local market was the best thing I ever did! He was able to lead me in the right direction for fresh salmon. Sustainable fresh salmon. And we’ve been happily eating it ever since!
But, plain old salmon, although good on occasion, is definitely better with a sweet and savory sauce. Enter Maple Mustard Salmon. Just a few ingredients, a piece of salmon, your broiler and dinner can be on the table in less than 20 minutes.
I don’t know about you, but 20 minutes is less than the time it would take to run out for fast food, or order take out, or have food delivered. Even on the busiest day, 20 minutes is manageable. We pair this one with green beans that you can steam in the bag. And to get my kids to eat just a few more fruits and vegetables, I like to serve Maple Mustard Salmon on a bed of spinach and surround it with peeled mandarin oranges. The sauce from the salmon spills over onto the spinach and voila- salad dressing!
Well, I may not be able to get off of the crazy carnival ride that is working mama’s life, but I can serve a healthy dinner made of all real food. Head to your local seafood market and you too can have a simple, healthy dinner for your family!

- 1-2 pounds fresh salmon filet
- 2 Tablespoons maple syrup (pure maple syrup, NOT pancake syrup)
- 2 Tablespoons Dijon mustard
- ½ teaspoon salt
- ¼ teaspoon garlic powder
- red pepper flakes (optional)
- Preheat broiler.
- In a small bowl combine maple syrup, Dijon mustard, salt and garlic powder with a whisk.
- Cover a baking sheet with tin foil (makes clean up quick too!).
- Lay salmon skin side down on foil covered baking sheet.
- Cover salmon with maple mustard sauce.
- Sprinkle with red pepper flakes (if desired)
- Broil on high for 10-15 minutes depending on the thickness of your filet and your desired consistency (check regularly after 10 minutes to ensure salmon does not become overcooked).
- Slice salmon into strips and serve!
