If you follow With Two Spoons on Instagram and watched our stories last week, you might have seen a little oops moment that occurred when I was trying to photograph a new drink recipe. For those who missed it, I accidentally knocked over a full drink (ugh!) onto a marble pastry slab and shattered the wine glass, spilled the drink, and tipped over a nearly full bottle of prosecco onto my carpet. It was most definitely not one of my finer moments, but in the end, the drink was well worth it. Friends, meet your new summer drink: The Hugo Spritz.

Despite the fact that it feels like summer just started yesterday, the Fourth of July is nearly upon us! If you’ve been a blog reader for some time, you might know that in my family, the Fourth of July is a big deal. Each year we gather at my grandmother’s lake home for a few days of classic Minnesota lake life. It is hands down one of my favorite times of the year. I love the sun soaked days chasing happy kids around and catching up with my extended family. Oh, and did I mention the food is always amazing? My grandmother is an incredible cook and always makes a fantastic feast on the Fourth. Filled with summertime classics as well as old family favorites, it is a meal everyone looks forward. Over time, and as our family has grown, the meal has become a larger family project, with everyone contributing their Fourth of July favorites. One of my favorite things in the world is a an afternoon at the beach. Tuck me under an umbrella with a cold drink (like a Hugo Spritz!) and a good book and I’m a very happy girl. My husband and I were recently returned from a trip to Hawaii. In addition to some soaking up the beautiful sights, perfect weather, and having some fantastic island adventures, I also had a bunch of relaxing days at the beach. It was heaven….
I have long said that if I could only choose one type of food to eat for the rest of my life, it would definitely be ice cream. I loooove ice cream. My love affair with the stuff started with family bike trips to the Dairy Queen as kid. At summer camp during my teen years, I was introduced to the gloriousness of Ben and Jerry’s Phish Food, an addiction that continues today. And don’t even get me started on my gelato obsession. Our family rule is: when in Europe, ice cream must be eaten at least once daily. Needless to say, I’m a fan of ice cream. That’s why I’m so excited to share with you our all-new No Bake Ice Cream Bars!
