Like many of you, I am OVER quarantine cooking. I started out excited. It was fun and cozy! And now? Well, I just want food that is easy, nutritious, and doesn’t take a lot of effort. Or a lot of dishes. These Almost Fancy Roasted Potatoes are the perfect side dish for all of your quarantine cooking needs.
Jump to RecipeI call these Almost Fancy Roasted Potatoes because they look like they took a lot of effort. Trust me when I say – they don’t. If you have a good, sharp knife or a mandoline, you can have them in the pan and ready to go in under 15 minutes.
The basic recipe for these potatoes require only 5 ingredients: yellow potatoes, garlic powder, olive oil, salt and pepper. Grab your mandoline and slice up about 2 pounds of yellow potatoes. Toss them with a good glug (I use 1-2 Tablespoons) of olive oil and then add some spices. Most of the time, I keep them simple with salt, pepper, and garlic powder. This round I got crazy and added a generous tablespoon of grated parmesan cheese. You can definitely spice them up by adding cumin or chili pepper or even some everything bagel seasoning! Once they are coated with the olive oil and spices, stack them in a couple of rustic rows in a shallow, small baking dish.
Cover that pan up with a sheet of foil and pop it into a 350 degree oven. Have a little patience – these little tots will take some time to bake. Depending on the thickness of your slices and the number of potatoes, I have found it will be 45-60 minutes for them to be cooked through. I start checking the potatoes at about 45 minutes and then about every 10 minutes until tender. If you want some crispy edges, take off that foil and toss them under the broiler for a few minutes at the very end.
Garnish with a little bit of parsley and some sea salt flakes and you’re ready for dinner. These will keep in the fridge for a day or two but are best when served right away.
Almost Fancy Roasted Potatoes
Simple roasted potatoes that look like you slaved all day. Easily customizable flavors.
Ingredients
- 2 pounds yellow potatoes, rinsed and gently scrubbed
- 1 Tablespoon olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- fresh cracked pepper, to taste
- 1 Tablespoon grated parmesan
Instructions

Preheat your oven to 350 degrees.

Using a sharp knife or mandoline, thinly slice approximately 2 pounds of yellow potatoes.

In a large bowl, toss the potato slices with olive oil to coat well.

Add the salt, pepper, and garlic powder to the potatoes and toss to coat.

Place the potato slices in two long stacks in your prepared baking pan (I used a 10.5 x7 " Le Creuset pan) and cover loosely with foil.

Bake x 45-60 minutes, until tender. If crispy edges are desired, place potatoes (uncovered) under the broiler for a few minutes until just golden. Serve immediately.
