Instant Pot Vegan White Bean Soup

I like to make January an eating challenge, a “reset” if you will. Last year I did Whole30, which was great (and hard) but I was a little alarmed at the amount of meat I ate. This year I decided to go Whole Food Plant Based (or at least vegetarian, I’m keeping my olive oil for now) for January. Turns out this Instant Pot Vegan White Bean Soup was the perfect dinner, with plenty of leftovers for lunches! Flavorful and filling, you won’t miss the meat.

Friday Five: Coffee Talk

As many of you know, I used to be a Diet Coke addict (drinking up to 12 cans per day). When I quit almost 2 years ago (cold turkey-yay!) Citrus Kissed Roasted Brussels Sprouts

It took me a long time to discover the amazingness of Brussels Sprouts. I wasn’t really introduced to them until I was a young adult and then I wasn’t really sure what all of the fuss was about. Seemed like just small cabbages to me and I’ve never really loved cooked cabbage! But then I discovered ROASTED brussels sprouts. And better yet, these Citrus Kissed Roasted Brussels Sprouts… which are a little sweet, a little savory, a little citrus-y, and ALL delicious! Now I’m #teambrussels all the way.
