Merry Christmas to all who celebrate! And happy celebrating to anyone celebrating ANYTHING this month (I’m looking at you Christmas, Solstice, Hanukkah, Kwanzaa, birthdays, and on some of these dark days we’ve had lately, I think we should celebrate just getting out of bed!).
We’ve enjoyed (and endured?) Christmas music, family togetherness and over the top decorating. We’ve gifted, baked, mailed cards, and peopled all month long. I’m exhausted, how about you? I think we all need to spend December 26th relaxing with these easy Caramelized Onion, Apple, and Brie Grilled Cheese Sandwiches!
So unfortunately my December was made even crazier by my daughter getting into a car accident and wrecking her car. She’s fine, everyone else is fine, her car is most decidedly NOT fine. Because of this, I will be spending December 26th searching for a car so that I can pass my (almost 10 year old, very well loved) car down to her. Stressful? Yes! December has been so busy, I haven’t even had a chance to go looking at cars yet, so I’m going to be making a fairly quick decision. Merry Christmas to me!

Clearly I’m going to need an easy food day. Something I can make quickly and eat standing up-or even in the car. But easy doesn’t have to be boring! I perfected these Caramelized Onion, Apple, and Brie Grilled Cheese Sandwiches while enjoying a fall weekend at the cabin. Not only are they are simple, they are delicious!
Remember when I told you to make caramelized onions and freeze those leftovers? You know back in this post? Here’s a recipe where they will defintely come in handy! I always keep caramelized onions, frozen in 1 cup portions, in my freezer. Combined with some very crunchy, thinly sliced, apple, and some creamy, melted brie, these brie grilled cheese sandwiches are a hit!
Caramelized Onion, Apple and Brie Grilled Cheese Sandwiches
This is the perfect quick, simple, hand held, comfort food!
Ingredients
- 6 slices bread I prefer Texas Toast, but sourdough would also be delicious!
- 8 ounces soft Brie cheese sliced thinly
- 1 apple sliced thinly
- 1 cup caramelized onions
- 2 Tablespoons butter
Instructions

Spread each piece of bread with butter on one side. Turn 3 pieces of bread over so that butter faces down.

Divide brie, apple, and caramelized onion into three portions

Stack one portion of brie, apple, and caramelized onion on top of bread, saving one piece of brie to put on top. Cover the stack with the other piece of bread, buttered side facing out. Repeat until you have 3 sandwiches.

Place onto a warm skillet or panini press. Cook until bread is warm and toasted, and cheese is melted. (You will need to flip sandwich once if using a skillet.) Repeat until all sandwiches are grilled!

Slice each sandwich in half and serve.
Recipe Notes
These sandwiches can be made in a skillet if you do not have a panini press. Just flip when you feel the bread is toasted enough on one side and allow it cook to on the other side.

Panini Press-I use this Cuisinart Grill and Panini Press at my house. This Bella Panini Press is the one I use at my cabin!
Spatula– I love this Pancake Turner to remove my sandwiches from the panini press.
Plates-If I’ve said it once, I’ve said it a million times. These plates from Magnolia are my very favorites right now! (Well, that is until our super talented cardiologist friend makes us some new stoneware-she is becoming a very talented artist!)
