I think I’ve made at least 2 million meals since the pandemic started. It seems with 4 people in our house, 3 of whom have been working and schooling from home, that there are never ending meals to be made. And I, for one, am tired of cooking! (I know, I know, I love cooking, but really… SO. MANY. MEALS.) Enter these Slow Cooker Southwest Chicken Bowls, which have saved dinner (and my sanity) many times.
Jump to Recipe …Easy Slow Cooker Homemade Chicken Stock
Despite the groundhog sighting in early February, we’re still firmly in winter wonderland around here, with no sign of it letting up. The snow is as high as we can pile it and we have so much, there isn’t a ton of room for any more. Homemade soup tastes perfect when tired from playing outside in the snow, and lately I’ve been making a ton of delicious varieties! The one thing they all have in common? Easy Slow Cooker Homemade Chicken Stock! It will blow your mind how easy this is to make, with ingredients that could really be considered “leftovers”!

Easy Slow Cooker Chicken Noodle Soup
The easiest homemade slow cooker chicken noodle soup you will ever find (well, short of heading over to grandma’s house…)!
I don’t know about you, but I am so over all of the holiday indulgence (although I wouldn’t turn away a piece of homemade toffee-I just didn’t get around to making it this year). I’m looking forward to the lighter recipes of January. And we’ll get there, I promise. As life would have it though, influenza has hit Minneapolis hard and I know my friends and family are looking for an easy soup recipe to provide some comfort. Easy being the key word. Enter this Easy Slow Cooker Chicken Noodle Soup. Easy, homemade, real food. This may be the cure! …
Instant Pot Korean Inspired Pulled Pork
I know you’ve already heard about my great love affair with the Instant Pot. I’ve gone and on about the magic of this kitchen appliance and as summer is coming I’m even more excited to have a great way to cook without having to turn the oven on and heat up my house. But so many people are asking me-what are you actually making in it? Certainly a good (and easy) way to start is my Instant Pot Chipotle Black Bean Soup (it’s even vegan), but if that isn’t your jam-then may I recommend what we’ve been eating on repeat? Instant Pot Korean Inspired Pulled Pork. (I DID include instructions to make this in the Slow Cooker/Crock Pot as well-just scroll all the way to the bottom.)…
Slow Cooker Beef and Vegetable Ragu
So, I’ve been told that I can’t eat Edible Peanut Butter Chocolate Chip Cookie Dough every day.
I know, right? Who are these haters? Now although I’m still not sure that is completely true, I will admit that sometimes a really good hearty dinner sounds good too (maybe followed by cookie dough?). And I guess if I’m going to be binging on cookie dough (and I am) then I better try to balance things with some vegetables. Enter Slow Cooker Beef and Vegetable Ragu. (And if you don’t have a slow cooker, don’t worry, I’ve got that covered too!)
As meals go, this one checks all of the boxes. Easy to make. Kid friendly. Hearty. Adaptable. And as the days and evenings get busier (anyone else feel like they are on a constant Merry-Go-Round?) this Slow Cooker Beef and Vegetable Ragu is a good one to come home to.

Slow Cooker Beef Barbacoa
I have a confession to make. I have never tried Chipotle’s Beef Barbacoa. Oh sure, I’ve been to Chipotle a million times. But I’m a more of a carnitas kind of a girl. So my family all thought it was a little odd when I came home with a chuck roast and announced I was going to make Slow Cooker Beef Barbacoa. Oh ye of little faith! All three of them actually got off of the couch to come and check it out as I pulled it out of the crock pot…the house smelled delicious!…

Slow Cooker Maple Chicken Chili
Some days are tough. Schedules that defy comprehension. Days where you feel like cloning yourself is the only way you’re going to get through. One child is supposed to be at soccer, one is supposed to by at Tae Kwon Do, and both you and your significant other need to be at work. You’re wondering how you are going to be in three places at one time. Days like these call for life hacks (and a village full of carpools!). Days like these call for Slow Cooker Maple Chicken Chili….
Balsamic Pork with Gnocchi
I won’t lie, it’s been a tough few weeks. I’ve been down and out sick and just getting out of bed in the morning has been a real challenge (and we’re talking getting out of bed to go lie on the couch). My poor husband has been keeping things rolling and picking up the slack with the kids and around the house. I haven’t been able to visit Holly and our newest addition to the With Two Spoons team (born October 6th!). I even spent Halloween holed up in bed while my dad handed out candy so my husband could take my little out. We’ve eaten pizza for 4 of the last 5 meals. But today, today I finally felt like maybe I could tackle dinner. And whenever you are struggling, go back to the beginning. Back to Balsamic Pork with Gnocchi….
