The Whole30 is over for me, and although I am eating a much more healthy diet (give me all of the fruits and vegetables!) I am finding that a little indulgence goes a long way, and is SO needed from time to time. Take these Double Chocolate Olive Oil Brownies for example. Each brownie has a crackly top, a fudgy, chewy interior, and chocolate for days. And they’re made with my secret weapon from Queen Creek Olive Mill! Bet you can’t eat just one! So let’s meet our secret weapon for these brownies: Queen Creek Olive Mill’s Vanilla Bean Olive Oil! This olive oil has a subtle vanilla flavor that makes it PERFECT for these fudgy, Double Chocolate Olive Oil Brownies! Sure you could use an unflavored olive oil from Queen Creek plus a teaspoon of vanilla, but the Vanilla Bean Olive Oil is delicious! (And I can’t wait to drizzle it over yogurt and granola or use it to make waffles!)
Brownies are such a fabulous indulgence. But everyone seems to like something slightly different. Fudgy, cakey, with frosting, without frosting, flavored, with nuts, plain. There is no right answer when it comes to brownies. These are my kind of brownies- fudgy with a crackly top-you know the kind of brownies you don’t NEED frosting for!
I developed this recipe while at the cabin, cozying up in -20 degree weather, snow falling outside of the window. These Double Chocolate Olive Oil Brownies are the perfect winter recipe! Luckily for all of us, they would be equally fantastic eaten on a beach or on a boat in the blazing heat! Versatile!
Did I mention these are dairy free (if you use dairy free chocolate chips)? Wah-hoo! Using olive oil in baked goods is a great substitution for butter or milk products. And as I learned at my Healthy Kitchen, Healthy Lives course, olive oil is a truly healthy source of fat. Let’s a take a moment to cheer about the fact that the “low fat” diet has gone the way of 80s bangs and rolled jeans. Anyone else remember binging on Snackwells and low fat crackers because they were “healthy”? Yikes!
Want to make these Double Chocolate Olive Oil Brownies? Of course you do! Pull out your 8×8 baking pan and let’s get baking. (PS-These are great for making with your kids!) Your biggest challenge will be waiting the 30 minutes until they are baked!
Double Chocolate Olive Oil Brownies
A decadent fudgy brownie, that everyone will love!
Ingredients
- 3 large eggs
- ½ cup Queen Creek Olive Mill Vanilla Bean Olive Oil
- 1 1/3 cup sugar
- ½ cup cocoa powder
- ½ teaspoon baking powder
- ½ teaspoon kosher salt
- 2/3 cup flour
- 1 cup semisweet chocolate chips (use dairy free chocolate chips if you want this to be dairy free!)
Instructions

Preheat oven to 350°F.

Prepare a 8x8 baking dish with nonstick baking spray, or wipe with additional olive oil. (I prefer to use a parchment paper sling as well)

In a medium bowl, combine eggs and oil.

Add sugar and combine.

Mix in cocoa powder, baking powder, and salt.

Add flour, stir until combined. At this point the batter will be very thick (and that is OK!).

Fold in chocolate chips

Add the batter to the baking dish

Bake for 25-30 minutes or until a toothpick comes out mostly clean in the center.

Allow to cool for 10 minutes.

Cut into squares and enjoy!
