Both Holly and I were vegetarians for portions of our younger years (we are now equal opportunity eaters-everything in moderation), so we can definitely appreciate a Meatless Monday (or Wednesday, or Friday, whatever). But both of us have husbands that appreciate hearty and filling (and when I say appreciate, I mean live for). Enter this Garden Vegetable Soup.
Chock full of delicious veggies, this soup is both hearty and filling. Easy to throw together and great for leftovers. Serve with crackers or a loaf of crusty bread and you have yourself a fabulous dinner!

Recipe Notes
This is a very adaptable soup. Don't like spinach? Don't add it. Your kids love peas? Throw in a cup of frozen peas. Have some extra zucchini? Shred it and throw it into the pot! Who doesn't love a soup that is both simple and infinitely customizable?
