I’m not going to lie. Eleven days into this New Year thing and I’m struggling. I know I made some resolutions and they may or not have been about getting more healthy. But really, I’m hungry. And not for salad. Adulting makes me want to eat, and I feel like I’ve done my share of adulting lately. I may have solved my hunger problem with this Edible Peanut Butter Chocolate Chip Cookie Dough. Well, one problem’s been solved anyway!
Let’s get a few things out of the way.
First isn’t all cookie dough edible? Yes. And I assure you I’ve eaten tons of it in my time. But…cookie dough meant to make cookies, contains raw eggs and they can contain Salmonella, so probably best to stay away. But does that mean that you can’t eat cookie dough? Absolutely not. You just need to make eggless cookie dough. Problem solved.
Can I make cookies with this? Maybe? Probably if you add eggs? Who knows? I don’t plan on finding on out. This Edible Peanut Butter Chocolate Chip Cookie Dough won’t last that long. If you really, really want to make cookies, try this recipe for Oatmeal Chocolate Chip Cookies instead.
Isn’t your resolution to be more healthy? I think so. And it still is. But a girl needs a treat. And I am that girl. And this is that treat. If you want healthy, try these Healthy Cookie Dough Balls instead.
Isn’t this dough too grainy, too buttery, too thick, too thin, too fill-in-the-blank? Why yes. Yes it is. It is the same consistency as cookie dough, not meant to be a smooth dip. It stores well in the refrigerator and should be eaten with a spoon. Frequently.
Can I leave out the peanut butter? Probably not. At least not with this recipe. I think that would dramatically alter the texture and then the recipe would need to be reworked. Could it be done? Sure. Am I going to do it? Not this time around. I like peanut butter. Another note, I used natural peanut butter that has very little salt and no added sugar. I would recommend using the same. After all, why would you even buy a peanut butter that had added sugar anyway?
One last thing. What else can I do with this recipe? Well, I’m so glad you asked! I promise you’re going to love the answer! Peanut Butter Chocolate Chip Cookie Dough Ice Cream. Although I haven’t had a chance to develop this perfect recipe yet, I promise I will just as soon as it warms up. Maybe sooner! In the meantime, you can form this edible cookie dough into a log, wrap it in waxed paper, freeze it, slice it and put it into any ice cream you make.

Edible Peanut Butter Chocolate Chip Cookie Dough
Ingredients
- 1 cup brown sugar
- 3/4 cup natural peanut butter
- 1/2 cup butter softened
- 1 teaspoon salt
- 1 teaspoon vanilla
- 1/2 cup flour
- 1 cup chocolate chips
Instructions

In a stand mixer cream the softened butter, peanut butter and brown sugar.

With the mixer running, add the salt and vanilla.

Slowly add the flour, continuing to mix.

Mix until completely combined.

Add the chocolate chips and mix for another 30 seconds.

Put into a glass storage container, find a spoon and enjoy!

I usually use flour from King Arthur Flour so I haven’t been too closely following the General Mills recall, but it something to consider. I don’t think it’s going to stop me though! XOXO.
