It’s finally here! The unofficial kick off weekend to my favorite time of year: SUMMER. Though I live in Minnesota, land of the cold (at least from December to March), I am a warm weather girl all the way. I love nothing more than bare feet and summery dresses on a perfect 80 degree day. I also love summertime eating, full of fresh fruits and vegetables, frequent grill meals, and creative cocktails by the water. This week’s edition of Good Food Reads is inspired by all of the summertime goodness I can’t wait to get cooking (and eating!). Happy reading…and eating!
Grilled Chipotle Orange Chicken Kabobs, for your weekend grill festivities!
I love the lightened up take on one of my favorite dishes, Chicken Satay with Lighter Almond Dipping Sauce.
Pineapple Punch with Ginger Beer. Oh man does this sound like the perfect summertime cocktail!
A gorgeous salad that would be great to bring to a picnic this weekend: Marinated Mozzarella Melon Salad.
Elote Bruschetta (!!!). If you’re looking for me this weekend, I’ll be eating this a plateful of this bruschetta.
Unfortunately, I’m working this holiday weekend so I’m planning to make a batch of Almond Sesame Soba Noodles with Quick Pickled Vegetables to take to work as a special treat.
Donut Glazed Yeasted Waffles may also make an appearance in my kitchen.
Summer Berry Crostini with Lemon Ricotta Honey sounds fresh and light. Take advantage of the beautiful berries in season now!
Another great party side dish: Roasted Veggie, Chickpea, and Pesto Quinoa Salad.
Cilantro Lime Cucumber Salad, for serving with your barbecue treats.
Cucumber Cilantro Jalapeno Margaritas. Because everyone needs a good summer margarita.
Happy Summer, friends.
