I don’t know what it is, but I had a hard time narrowing down my picks for this week’s Good Food Reads. There are just so many great foodie finds out there! Between all of the end of summer produce (the corn! tomatoes! the stone fruit!) and starting to crave fall time comfort foods, the recipe inspiration is endless. I have been on a huge salad kick lately. Gotta take advantage of all the great fresh veggies right now! This gorgeous Chicken Avocado Caprese Salad from Cafe Delites is next on my list. I’m not sure it even counts as a salad, it looks so hearty and delicious.
Similarly, I can’t wait to try this Arugula & Watermelon Salad from Cookie + Kate. I’m eating allllll the watermelon right now (maybe it’s a pregnancy thing??!?!) and I love the idea of pairing the sweet, crunchy fruit with the peppery bite of fresh arugula and some of my favorite, salty kalamata olives.
In my continual quest to keep up with new recipes for Meatless Monday, I came across these gorgeous Cauliflower Stuffed Shells with Butternut Squash Sauce (via Joy the Baker, from the Lo So Good cookbook) and this recipe for Stewy Chickpeas with Tomato and Feta (Alexandra’s Kitchen). I can’t decide which will go on the menu for this coming Monday, but they look so great that I might not wait!! And don’t even get me started on this Coconut Red Curry with Chickpeas from Minimalist Baker.
As we get ready to welcome a new baby to our family this fall, I am thinking about storing away some easy meals for those (inevitable) crazy days where cooking just isn’t in the cards. For me, cooking dinner is a sanity saver, but breakfast is a tough one. With my first baby, I was starving every morning but had little energy to throw together a healthy breakfast after a long night. I’m thinking some of these great Freezer Smoothie Packs (via Half Baked Harvest) might be a great, easy fix for those crazy mornings!
Speaking of mornings, I am drooling over these Orange Mascarpone Fig Muffins from Sarah at Broma Bakery. The photos are gorgeous and she describes them as the love child of a donut and a muffin. Hello! I am IN. Planning to pick up a carton of figs at Costco tomorrow and if these are as good as they look, I’m definitely going to freeze a batch for after baby!
Simply Perfect Vanilla Cupcakes. I’ve been searching for a new go-to basic cupcake recipe. I think this might be it. I’m planning to make some this weekend and I’ll report back!
A crockpot recipe for ya’ll: Slow Cooker Creamy Lemon Chicken and Artichoke Pasta. Oh man, does that sound a great transition season comfort food!
And finally, there are so many cookbooks coming out this fall that I am super excited for! A few that I’ve got on pre-order: Molly on the Range, How To Celebrate Everything (from Jenny of Dinner: A Love Story), and The Shortstack Cookbook, by Nick Fauchald. Nick is a great guy that I went to college with way back in the day (and who, incidentally, helped to get me a great internship years ago. Hi, Nick! SO excited for you!).
