Are you ready for some Egg-citing Chicken Recipes? Yeah, I went there. And I don’t care. After a long day at work, I’ve been trying to come up with a fun title for this week’s Good Food Reads, which is all about great new recipes for that kitchen staple: chicken. As it turns out, when you are tired and start playing around with chicken puns, it rapidly degenerates into fits of laughter about bad, kid-style chicken jokes. Good times, friends, good times.
Chicken puns aside, I really do have some great new recipes for you all this week. I always keep a variety of chicken in my freezer, ready for last minute dinners or recipe experimentation. It’s inexpensive, relatively healthy, and generally quick to prepare. What’s not to love? My biggest complaint with chicken is that it can easily get a little boring so I’m always on the lookout for recipes to spice it up (both literally and figuratively).
One of my favorite recipes, especially in the summer, is this Chicken with Peanut Dipping Sauce and Pickled Cucumber Salad. I first tried this recipe a few years ago after Lane gave me a copy of the Dinner: A Love Story cookbook. It’s a super easy and healthy recipe that you can easily make on busy weeknights.
I’m super excited to try this recipe from A Farmgirl’s Dabbles for Grilled Chicken Skewers with Green Curry Yogurt Sauce. How pretty is that sauce? And I love how she uses so many fresh summer herbs. Mint! Basil! Parsley! Perfect for using my herb garden bounty.
Speaking of herbs, I think I’ve posted about this recipe before, but if you haven’t tried it – you really need to. The Indecision Chicken from Small Victories is absolutely my go to summer entertaining recipe. Fresh herbs, lemons, mustard and olive oil combine to make a heavenly marinade and the most flavorful chicken! I can’t get enough. Buy her cookbook. You will not regret it. I promise.
Another go-to chicken recipe in our home is our Sweet Corn, Zucchini, and Chicken Tostadas. This is a once a week recipe around here in the summer! It’s simple, fast, and full of flavor. My husband and my kids gobble it up.
Need more grill options? Check out these Easy Greek Chicken Kabobs! The marinade uses yogurt, which is always a favorite of mine since it keeps the chicken really tender and adds a great tang.
Another one pot go to recipe? This One Pot Farro With Chicken and Tomatoes is perfect. It’s healthy comfort food at it’s finest. And…minimal dishes, which makes it a total weeknight winner.
Sometimes I need a “just throw it in the oven recipe” and this one for Cheesy Chicken Parmesan Bake is sure to please both kids and adults. Chicken, cheese, and carbs? Check and Check.
Molly Yeh always has the best flavor twists in her recipes and while this specific recipe isn’t hers (it’s from Jessica Battilana’s new book, Repertoire) she is featuring this recipe for Grilled Tahini Chicken on her blog and I am really excited to try it. It’s going on my to-grill list ASAP!
A great recipe to use up your summer garden bounty is definitely this Skillet Lemon Pepper Chicken and Garden Veggies with Feta and Basil. All those beautiful veggies plush chicken in a white wine pan sauce. Yum!
I’m planning to give this Curried Chicken Waldorf Salad a go tomorrow for lunch. Such a fun twist on a classic!
Finally, a tried a true dinner option is this great One Pot Chicken Tarragon. Easy clean up, awesome flavor. The best!
