So, I know the height of summer isn’t really considered prime baking season but sometimes a girl just really needs a cookie, am I right? Don’t get me wrong – I love, love, love all of the easy, fresh, summertime recipes in abundance right now. I do. It’s just that yesterday, I also really needed a cookie. A fresh chocolate chip cookie. So I baked some. And now all I want to do is bake some more. I want butter. I want chocolate. I want frosting! And because I have cookies, brownies, and pies on the brain, my recipe research for this week’s Good Food Reads ended up a little, uh, lopsided. So I’m embracing it! Bust out your measuring cups, dust off your apron, and preheat your ovens. We’re about to get down with some serious baking deliciousness. It’s time for Good Food Reads: Get Baking!
I’m kicking things off with these S’Mores Chocolate Chip Ice Cream Sandwiches. We didn’t make any s’mores while up at our family cabin these past few days (I know! It’s inexcusable. But there were bugs – and I’m a wimp.) so I’m making up for it with these beauties. Also, if you haven’t yet made Smitten Kitchen’s Saltine Crack Ice Cream Sandwiches, just stop what you’re doing and go make these. Now. You won’t be sorry.
Today is a “get stuff done” day and that means multiple cups of coffee and tea at my desk while I work. I’m wishing I had some of these Blackberry, Cherry, and Lavender Scones with my tea. Not only do they look and sound amazing, but they are gluten free and vegan to boot!
I am going to make this chocolate cake tonight, simply so I can have some while working tomorrow. Check out the frosting layer on the photos – girl knows how to frost a cake! No skimping, for sure. And I love the one bowl baking idea.
Now, technically, these aren’t baked but I’m making an exception because they are PEACH ROSÉ POPSICLES. Yes, you read that correctly. They are also vegan and dairy free, if that’s your thing. I’m mostly focusing on the peach rosé thing. And since I’m already breaking my baking rule, why not try these Rhubarb Mint Mojitos?!?!
Sometimes I like to feed my baking addiction with a slightly healthier option. When that urge strikes, I typically turn to recipes by Monique at Ambitious Kitchen. She’s got the balance down, that’s for sure. I love her Zucchini Banana Chocolate Chip Muffins so I’m excited to give these Paleo Zucchini Banana Bread Bars a try.
I’m gonna get a little out there for a sec: Watermelon Jerky. Yup, dehydrated/baked watermelon slices. Has anyone made this? I’m so curious to know if it’s good!!!
More fruit fun: Sour Cream Panna Cotta with Strawberry Compote. They are just so pretty I can hardly stand it!
And finally, Mixed Berry Almond Croissants. Otherwise known as: what I will be eating tomorrow. All day. (Before you get scared – you can use store bought croissants! Genius, right!?!?)
