Now, I know what you’re all thinking. I just wrote a post about feeding my picky toddler, so if I’m talking about snacks, this must be more kid food stuff. Nope. This time, I wanna talk about snacks for grown-ups. We all love veggies and hummus (you can check out my favorite hummus recipe here) but I’ve been looking for some recipes that are pushing my snack boundaries just a little and boy, did I find some good ones! Grab your stretchy pants and get ready to check out this week’s Good Food Reads all about snacks.
Ok, I know I said this wasn’t all about kid snacks but when I came across this recipe for Fig Newtons, I couldn’t resist. The recipe is from the genius cookbook, Bravetart, and is featured on Smitten Kitchen. Double win!
If you wanna get fancy, or impress your friends at an afternoon tea, give this Honey Orange Ricotta Toast a go. Have you ever seen prettier toast?! And also…the smell of test is just the best, isn’t it?
Snacks don’t have to be unhealthy. For an indulgence that’s full of nutrition, give these Lemon-Coconut Date Balls a try.
The genius SkinnyTaste also has a recipe for a healthier version of my state fair favorite: Fried Pickles. She serves them up with a skinny herb buttermilk ranch dip. I also think they’d be great with our dill dip!
My mom loves to serve stuffed dates as an easy, super yummy appetizer. I love them stuffed with blue cheese for a salty-sweet combinations! Give these Dates and Blue Cheese a try for a simple snack. I also love goat cheese when I’m craving something salty-sweet. Have you tried our Whipped Goat Cheese Cups with Honey and Pistachio?
Another easy option for those salty cravings? Edamame. I keep a bag of frozen edamame in my freezer at all times because they make for such a great snack. Typically, I toss them with a little rice wine vinegar and salt but I can’t wait to give this recipe for Thai Sesame Edamame a try!
Another pantry staple that makes for a great, easy snack is chickpeas. I love to roast them for a crunchy treat. They’re especially good with some added lime! Try our recipe for Roasted Chickpeas With A Hint of Lime.
Smoothies are always great for snacks. I have a whole group of recipes we rotate around here, but I’m hoping to give this recipe for a Strawberry Cashew Smoothie a try this weekend.
Finally, I love to have nuts around for a healthier, filling snack. I’m definitely planning to make a batch of these Roasted Honey Dijon Pecans this weekend! I think they’d be great in a salad, too!
