If you’re house is like mine, it is all of the sudden filled with new school supplies and school clothes and your inboxes are filled with messages on all of the back to school dates and times. Picture days, schedule days, open houses, curriculum nights, these next few weeks will be non-stop back to school-and some of your kids may already BE back to school. Thank goodness, my kids don’t start until the day after Labor Day so I have few more sunshine filled days to start planning for the chaos that is to come!
Why the Instant Pot?
I must admit I was really skeptical when my friends encouraged me to buy an Instant Pot a few years ago. After all, I was trying to declutter, and I wasn’t really sure how another gadget was going to help with this! But after my in-laws bought me THIS INSTANT POT I decided I had to try it (although it only took me a year to get it out of the box, details, details…). But once I started using it, mind blown! I could quickly do meats, vegetables, mashed potatoes, soups, without heating up my kitchen with the stove! Turns out my husband was a fan too and now we have an Instant Pot at home as well as at the cabin!

We both love our Instant Pots and use them frequently. We have both found them a game changer for cooking flavorful but fast meals for our families. Here are a few of the ones we’ve developed.
Instant Pot Korean Inspired Pulled Pork This one uses a frozen pork shoulder to make tender pulled pork in a flavorful sauce. Enough for 2 meals for a family of four, I usually serve this one with rice and broccoli.
Instant Pot Coconut Curry Chickpeas This vegan recipe is quick, easy and healthy. Serve with cauliflower rice (you can get this frozen at Trader Joes) and steam-in-the-bag green beans for a full meal.
Instant Pot Salsa Verde Chicken Soup The perfect bridge between seasons, this summery tasting soup is warm and hearty making it perfect for fall! Great for dinner or packed in a thermos to eat after sports practices or while watching all of those kid’s sports games.
Instant Pot Bean and Bacon Soup This soup screams fall. Warm and hearty, it is both filling and flavorful. Cooks quickly and has extra protein from the beans to keep you full longer.
Instant Pot Black Bean Tacos with Avocado Crema This one is a big hit in my house. The bean and squash mixtures makes enough filling to be used for 2 meals. My kids can put together their own dinners using the leftovers. Everyone can add the toppings they like-perfect for picky kids.
Instant Pot Thai Butternut Squash Soup The butternut squash from my garden is almost ripe and then I will be making large batches of this to freeze. But this one cooks up quickly enough to make a great weeknight dinner.
