For today’s Friday Five I thought I would take a little walk down memory lane. With Two Spoons turned FOUR last week and it is amazing how far we have come. From questionable photography and no one to see it anyways, to sponsorships and 34,000 Facebook followers, we’re so proud of our little slice of the internet! From a conversation about burn out at work, to bemoaning the fact that we had lost our creative sides, to “maybe we should start a blog”. We sat in Bruegger’s drinking our coffee and hyperventilating until we pushed the Publish button. With Two Spoons was born. (read our story here!)
Our first post was this tomato soup, which is still one of my favorite recipes of all times. (But the photography leaves a lot to be desired…) We signed up for photography classes at National Camera Exchange where a super patient photographer answered all of our questions and taught us how to use our “fancy cameras”. I also took a class with Pixel Dust Photography and did one of the last Pinch of Yum Food Photography Workshops. I personally think it paid off.
December 2016 (Happy 1st Anniversary!) brought these Thai Meatballs and Slow Cooker African Peanut Stew, two recipes sure to please over the holidays! We also gave my daughter a guest post so she could publish the results of her 8th grade science project, Experimenting with Baking Substitutions.
December 2017 (Happy 2nd Anniversary!) brought Instant Pot Maple Apple Steel Cut Oats and a Holiday Gift Guide featuring gifts I still want to give and receive! We used our Instant Pots a ton, balanced running a blog with full time jobs, families, and Holly with a one year old! We truly understand what it means to be “too busy to cook”! (But we also understand why it is so important to do it anyway!)
December 2018 (Happy 3rd Anniversary!) brought Cranberry Orange Make Ahead French Toast Bake which has been made many times by many people both near and far (and yes, you can substitute orange extract with or without some orange zest for the orange emulsion we used!). It also brought us these White Chocolate Cranberry Scones which are perfect for gifting to friends or neighbors, or for a special Christmas morning treat! 2018 also brought our debut in Southwest Metro Magazine.
And that brings us to December 2019! Four years of fun, food, and friendship! This December brought Salmon Breakfast Scramble, Gingerbread Energy Bites, and Instant Pot Lime Cilantro Rice. This past year we had our debut in Minnesota Monthly as well as a mention in ACEPNow. We continue to work with our favorite olive oil company, Queen Creek Olive Mill, developing recipes featuring their amazing olive oils and balsamic vinegars!
So what is ahead for 2020? SO MUCH! We’ll be bringing you more recipes, more books, more musings on other parenting, fitness, skin care, and travel topics. Plus more of our favorites! We hope to hit a little more on nutrition (quick, easy, and healthy-YES PLEASE) and more on how to find that elusive kitchen/ busy life balance.
