For better or worse, you my dear readers, are all on this quest for better health with me. First ditching the Diet Coke, next revamping my diet. But just because I’m trying to improve my daily diet, doesn’t mean my food needs to be boring. Or mundane. And I don’t need meat in every meal to feel satisfied.
These Healthy Vegan Lettuce Wraps are filled with flavor, texture, and are just so satisfying.
I definitely wanted substance for these wraps, so I decided to substitute Cauliflower Rice for the meat. Cauliflower rice is filling, full of fiber, and best of all, low in calories. You can buy cauliflower already in rice form (I’ve seen it at my local grocery store as well as at Costco and Trader Joes), or even easier, you can make it. I just bought a head of Cauliflower ($1.99 at my local grocery store), broke off half of the florets, and pulsed in my food processor (affiliate link) for approximately 30 seconds. Voila! Cauliflower rice!
I also used romaine leaves instead of the typical butter lettuce leaves. I like romaine leaves better because they are a little sturdier and were easily available in the produce section of my grocery store. If you prefer butter lettuce leaves, by all means, go ahead and use them!
Some of the other ingredients may seem exotic and for that reason I will give you links (affiliate links) to get them via Amazon, but, truly, they were all available to me in the International aisle of my local grocery store-and none were very expensive there!
Hoisin Sauce – An Asian condiment used for dipping, stirfries, and in many Asian dishes.
Sambal Oelek – An Asian chili paste (check the ingredients, most are made just of chilis, but several have secondary ingredients). Huy Fong is a brand that is just chilis, no additives.
Rice Vinegar – A vinegar made from fermented rice.
Soy Sauce – A sauce made from fermented soy beans. Tamari can be substituted for those who need a gluten free alternative.

Healthy Vegan Lettuce Wraps
These Healthy Vegan Lettuce Wraps have all of the flavor of PF Changs' lettuce wraps, but are made completely vegan by using cauliflower rice and mushrooms instead of chicken. Easy to make at home, your whole family will love these!
Ingredients
Lettuce Wraps
- 1 Tablespoon olive oil
- 1 Tablespoon sesame oil
- 3 cups cauliflower rice
- 8 ounces crimini mushrooms
- 1 onion, diced
- 2 cloves garlic
- 8 ounces water chestnuts, diced
- 1/4 cup Hoisin sauce
- 3 Tablespoons soy sauce
- 1 Tablespoon rice vinegar
- 1 Tablespoon Sambal Oelek
- 2 teaspoons ginger, freshly grated
- 1/2 teaspoon salt
- 10 romaine lettuce leaves
Dipping Sauce
- 1/2 cup water
- 3 Tablespoons soy sauce
- 2 Tablespoons sugar
- 1 Tablespoons rice vinegar
- 1 Tablespoon green onion, chopped
- 1/4 teaspoon Sambal Oelek
Instructions
Vegan Lettuce Wraps

In a large skillet heat olive oil and sesame oil over medium high heat.

Add Cauliflower rice, cremini mushrooms, and onion.

Cook over medium high heat for 5 minutes until onions are translucent. Break up large mushrooms with your wooden spoon as you stir.

Add garlic and stir for 30 seconds

Add water chestnuts, hoisin sauce, soy sauce, rice vinegar, Sambal Oelek, grated ginger, and salt.

Cook over medium high heat for 5 minutes until cauliflower is soft and the water is out of the mushrooms. Remove from the heat.

Place mixture into romaine lettuce leaves forming the wrap. Serve with Dipping Sauce.
Dipping Sauce

Place all dipping sauce ingredients into a small bowl and whisk until combined.

Serve Dipping Sauce with Vegan Lettuce Wraps.
Recipe Notes
Calories shown are for 1 lettuce wrap and 1 Tablespoon of Dipping Sauce.
You can alter the amount of Sambol Oelek if you would like a less spicy version, although I was easily able to inhale multiple of these without breaking a sweat.
Although some of these ingredients may seem exotic, I bought them all from my local grocery store. They are also available on Amazon. I have also included some other recipes using these ingredients in the post, so you won't be left with ingredients you can't finish!
