As everyone knows, I love my Instant Pot. Is it always faster? No. But I don’t have to worry about pots boiling over. I don’t have to continually stir anything. I can go take a shower while cooking. That, to me, is the ultimate in multitasking. So if I have the option to make something in my Instant Pot I usually choose it!
And although I am not much of a breakfast fan, I have found that having these Tropical Steel Cut Oats already made up in my refrigerator makes breakfast easier for both me and my kids. Filling, just a little bit sweet, and filled with as much as fruit as you like, these Tropical Steel Cut Oats are an easy go to morning delight.
Gluten free? No problem-just make sure your steel cut oats are marked gluten free. (Bob’s Red Mill and even Quaker make steel cut oats that are specifically gluten free). Vegan? Also no problem. Just substitute coconut oil for the butter and maple syrup for the honey and you are good to go.
Instant Pot Tropical Steel Cut Oatmeal
This is a delicious, easy to make breakfast perfect for the whole family!
- 1 Tablespoon butter
- 1 cup steel cut oats
- ¼ teaspoon salt
- 2 cups frozen fruit (a mixture of mango, pineapple, and sliced strawberries works best!)
- 1 cup coconut cream
- 1 ½ cups water
- ⅓ cup honey
- 2 teaspoons vanilla
- ½ cup shredded coconut I use unsweetened, but sweetened would be OK
Put instant pot on saute mode. Melt butter in pot.
Add steel cut oats and salt. Saute for 1-2 minutes until oats are slightly toasted.
Add fruit, coconut cream, water, honey, vanilla, and shredded coconut. Secure lid and turn Instant Pot to manual. Cook on manual high pressure for 8 minutes.
Natural release for 10 minutes.
Stir and allow to sit for 5-10 minutes until thickened. When ready to serve, garnish with fruit, honey, and shredded coconut as desired.
- Gluten Free Option: Just make sure you are using steel cuts oats that say Gluten Free on the package!
- Vegan Option: Swap out the butter for coconut oil and the honey for maple syrup.
- No coconut cream? Coconut milk will work as well!
- Want to up the protein content? Garnish with macadamia nuts
- Store in a air tight container in the refrigerator for up to a week.
