And with the holidays here, you ‘ll likely be entertaining. Usually the idea of entertaining makes me want to hide in bed, but not since I’ve found this easy make ahead appetizer! Lemony White Beans -a simple appetizer that can up your entertaining game. Now hurry up and get out of your pajamas-you’ve got people coming over!
I first stumbled upon the initial version of Lemony White Beans in what may be my very favorite cookbook of all time (I’m pretty sure we’ve previously discussed my addiction to cookbooks…). Date Night In by Ashley Rodriguez of Not Without Salt, is a touching love letter to her husband, a glimmer of hope for those of us in the trenches with small children, and an ode to great food. I actually read this cookbook from cover to cover. (And to make it even more special, it was a gift for my most recent big birthday from one of my besties and my blog partner in crime-Holly!)
The recipe for Lemony White Beans is one of those great recipes I’ve made time and time again. It’s the perfect side dish for Chipotle Pulled Pork Sliders. Processed in a food processor or high powered blender, it is a fabulous dip. But my favorite way to serve these Lemony White Beans is on a charcuterie platter. Grab a few kinds of crackers, some sopressata, and some pepperoni and arrange it all on a platter. Place a bowl of Lemony White Beans in the center with a spoon. There are never any leftovers!
Because these Lemony White Beans are better if they are allowed to sit overnight and take less than 10 minutes to throw together, they are the perfect make ahead appetizer for your next party. Try them, you’ll love them.
Lemony White Beans
Ingredients
- 1 15 ounce can cannelini beans drained and rinsed
- 1/4 cup red onion minced
- 1/4 cup pecorino cheese grated + additional for garnish
- 1 Tablespoon lemon zest
- 3 Tablespoons lemon juice
- 3 Tablespoons olive oil
- 2 Tablespoons fresh rosemary minced
- 1 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions

In a medium sized bowl, combine lemon zest, lemon juice, olive oil, rosemary, red pepper flakes, salt and pepper.

Add white beans, onions and pecorino and coat with the lemony marinade.

Store in a glass container in the refrigerator overnight.

Place into a serving dish and garnish with additional pecorino.
