I am a carb addict. It’s true. A few years ago, I tried to do the whole low-carb thing and let’s just say, I wasn’t a pleasant person for a while. I have no problems passing up a tray of sweets, but salty carbs? Don’t get in my way. That is especially true for roasted potatoes. I love them prepared just about any way, but these Bacon Olive Oil Smashed Potatoes are my new favorite thing. As some of you may know, we’ve partnered with Queen Creek Olive Mill in Arizona to feature some of their amazing oils and vinegars throughout the year. We have been long time fans of their amazing products and I make it a point to get out to the olive mill each time I’m in the Phoenix area (I have serious cravings for the prickly pear lemonade and the olive oil cupcakes!). I was originally going to bring you an ooey-gooey dessert this week. And don’t worry, I will still bring you that particular deliciousness (after all it’s good to have something to look forward to, or so my parents always told me!) -but you’re going to have to wait until next week. Instead I have a more savory treat for you. Luckily for me (and now you), I had the most amazing gift brought to me this week. My fabulous neighbor, Heather, brought me a windfall of vegetables from her inlaws’ cabin garden (find them at TheCabinGarden.com). I just experienced Avocado Toast for the first time. And definitely not the last time. In fact it is a new favorite!
So goodness knows this blog isn’t political-after all everyone needs to eat no matter what your political leaning. And we love all of our friends and viewers regardless. But that’s not to say that Holly and I don’t have very strong views and opinions (and luckily we agree). The last few months have made it very clear that much needs to be done to bring us together as a country and to heal us as a nation. The big disagreement seems to be in exactly how to do this. We need to find common ground and we may need to start small. Truly though, I think we can all agree that anything that limits our access to avocados is a bad plan. A bad plan indeed. Happy one year Blogiversary to us! We’ve been officially bringing you delicious food for ONE FULL YEAR! And what a year it was! In fact I’m not sure any other year has ever gone so fast! Our little blog duo has officially seen a new baby born (congrats Holly), a preschooler whose world was rocked by a new baby sister, a child who started kindergarten, and a teenager who has hit her stride. Holly and I are both another year older and wiser in our full time careers and yes, we’re both still married (Holly 10 years and myself 18 years) despite crazy chaotic schedules and demands (yay, guys-thanks for hanging in there with us!). But even more exciting, we’re both still loving blogging and bringing you our favorite recipes! My teenage daughter recently said to me “Mom, you don’t need to put bacon in everything!” with the exasperated sigh that all teenagers use when dealing with their mothers. Hmmm…we may be speaking different languages, because I sure don’t understand this comment! It is possible some of you are going to say I took too many liberties with this Chipotle Caesar Salad, and maybe that is true.
