We all know that we should eat more vegetables. It’s great for our health and good for our planet. Let’s face it though, vegetables can sometimes be boring. If you’ve been reading the blog for awhile, you may know that I’m a really big fan of one-pot and sheet pan style dinners. Like so many busy parents, I rely on a well tested rotation of weeknight dinner recipes to get through those busy weeks. My personal collection of go to recipes seems to have a common theme: they are all easy to prepare, don’t need fancy ingredients, and don’t make a huge mess (because, let’s face it, dishes are the least fun part of cooking!). Recently, I’ve been looking to add some new dishes to our rotation and with winter seemingly never ending around here, I wanted to get some more bright flavors onto our plates. This week’s recipe for Lemon Roasted Shrimp with Broccoli and Rice does all of that and more. I think you’ll love it!

Good Food Reads || 03.31.17

Good Food ReadsI’m going to be very honest with you. There is no real theme for this week’s Good Food Reads. And I’m 100 percent ok with that. What we do have is a collection of really good recipes from around the blogging world to hopefully fill your kitchens this weekend. I’m gearing up for a busy work weekend so I’ve selfishly included a number of easily portable, healthy salads. Similarly, I am planning to reinstate meatless Monday at my house and so I’ve dug up a tasty looking vegetarian soup recipe that I’m excited to try. What are you cooking this weekend? Here’s my wish list:

As all of you who follow our Instagram feed (@withtwospoons) already know, I’ve been in the Mediterranean for the past two weeks.  Traveling through Spain, Italy and Greece was AH-MAZING!!!!  For sure, this awesome trip will color my next few culinary choices for this blog, but for now, re-entry is HARD.  I’m jet-lagged, trying to catch up with the kids and their activities, and trying to stock an empty refrigerator.   I need quick, simple and healthy.  I need Roasted Broccoli….
