Happy New Year! 2019 is here! And so is our Dutch Oven Roasted Chicken!
Have I mentioned that I’m doing the Whole 30? I can’t even really tell you why (because I’m not really sure), other than I wanted a challenge. And for my carb addicted, cheese loving, Taco Bell going self, this might be the ultimate challenge. But who knows, maybe I’ll find that I love it and my body loves it and I feel great and…well, hopefully I’ll survive anyway. My stubborn nature will definitely come in handy here. Thanks to my husband (who wasn’t given a lot of choice) and my friend, Lynnea, who are going to be my main source of support and have agreed to do the Whole30 with me. And you. I’m sure you all will support me. Right? Starting with this Whole 30 compliant Dutch Oven Roasted Chicken.

Sheet Pan Chicken and Bell Pepper Fajitas
If you’ve been following us on social media, you might know that I spent a good portion of the month eating my way through the mediterranean. It was a lovely trip filled with gelato, amazing Greek food, and fantastic Italian drinks. I’ll definitely be posting more on my trip (and some travel inspired recipes!) later this summer, but as I transition back into real life and recover from jet lag, I’ve been relying on quick and easy recipes to get dinner on the table for my family. Are you ready for some Egg-citing Chicken Recipes? Yeah, I went there. And I don’t care. After a long day at work, I’ve been trying to come up with a fun title for this week’s Good Food Reads, which is all about great new recipes for that kitchen staple: chicken. As it turns out, when you are tired and start playing around with chicken puns, it rapidly degenerates into fits of laughter about bad, kid-style chicken jokes. Good times, friends, good times.
Chicken puns aside, I really do have some great new recipes for you all this week. I always keep a variety of chicken in my freezer, ready for last minute dinners or recipe experimentation. It’s inexpensive, relatively healthy, and generally quick to prepare. What’s not to love? My biggest complaint with chicken is that it can easily get a little boring so I’m always on the lookout for recipes to spice it up (both literally and figuratively)….

It is a bit hard to believe that the unofficial kickoff to summer is almost here! Since we had nearly two feet of fresh snow here just over a month ago, it still feels a little strange to be sitting in the 90 degree heat on my porch today.
