Curried Cauliflower Quinoa Salad

Hey friends! The end of summer has been a little crazy here at With Two Spoons so we are taking the week off from our kitchens and revisiting some of our favorite recipes of days past. I’ve been loving this Curried Cauliflower Quinoa Salad for easy, portable lunches these days. If you haven’t tried it before, read on and give it a try the next time you’re in the mood for a great, flavor packed lunch or side dish.

Cauliflower Quinoa Curry

I’ve always been a voracious reader (and eater, truth be told) and when e-readers first came out, I swore up and down that nothing – nothing! – would ever replace a physical book in my mind. I loved the feel of them in my hand, the smell of the paper, and seeing them stacked up on my bookshelves. Well, fast forward a few short years later and my kindle is one of my very favorite things. I love having so many books at my fingertips and not having to carry so many heavy books when I travel. The one thing it hasn’t replaced? My cookbooks. I will confess that I probably have a bit of a cookbook addiction. I love them. I read them like novels, pouring over the beautiful photos and stuffing bits of colorful post-it notes onto the pages of recipes I want to try. Growing up, my grandmother had the most impressive collection of cookbooks I’ve ever seen and I’m fairly certain my love of cookbooks comes straight from her. Some of the best books her in collection? Small town church cookbooks.  Those little gems are filled with home cooking treasures and I love to read them for inspiration from fellow home cooks. Instant Pot Coconut Curry Chickpeas

Like so many others, I’ve become somewhat of an Instant Pot fanatic. When I first bought my Instant Pot, it sat in the box for about six months, coming out only to serve as a glorified rice maker. Now, don’t get me wrong, it’s a great rice maker, but I didn’t really appreciate just how great this kitchen instrument was until I started using it to fast track healthy dinners for my family. Over the past year, it’s become a go-to tool for soups, stews, roasts, and countless large batches of quinoa. I love that it allows me to produce meals that taste like I’ve been working on them all day, but in reality, came together in less than an hour.  My latest IP favorite? This simple recipe for Instant Pot Coconut Curry Chickpeas.

Continuing my love affair with the InstantPot: Life Changing InstantPot Beef Stew from the lovely Lindsay at Pinch of Yum. Since we’re still working our way slowly into spring over here in Minnesota, this

Patio season is going to be here soon and I’m collecting cocktail recipes for entertaining. The latest addition to my list? The Ginger Rogers from Broma Bakery. With fresh ginger, grapefruit, and gin, how could it not be perfect?

Though we are nearing the end of citrus season, I’m still planning on getting in a batch of these Thick and Chewy Lime Bars with a Shortbread Crust. And I’m just aching to get my hands on some fresh rhubarb so that I can make these Roasted Rhubarb Scone Sandwiches with Vanilla Bean Glaze. Gorgeous.

Try this easy appetizer: Marinated Goat Cheese. Elegant and full of flavor. Another great spring option? Buttered Radish Tartines. The key is really good butter and a fresh, crusty bread loaf.

How on earth is it already Friday and time for another Good Food Reads? I don’t know about all of you, but I am soooooo ready for this thing we call a weekend! My son recently turned four and we are celebrating his birthday with his first more-than-just-family birthday party. He is so excited and I am so tired. Lane is also having a birthday party this weekend and I know that we are both appreciating easy, comforting foods this weekend. I’m personally going to be trying a new Winter Lasagna with butternut squash and brussels sprouts tonight and making a double batch of chili and Jalapeño Cornbread for tomorrow night after the party! We are supposed to have beautiful weather all weekend – 45 degrees in Minnesota in February!! – so I think I’ll come up with something for my hubby to grill on Sunday. Can’t wait. Since welcoming my daughter in October, I’ve been on a bit of a mini-maternity leave from the blog, focusing mostly on Good Food Reads each week while Lane (bless!) has really taken over the cooking posts.
