Grilled Shrimp Skewers with Jalapeño Chimichurri

May 22, 2018 By Lane 47 Comments

Summer is here and I just can’t stay away from the grill.  Seems like now that the weather is warm, everything needs grill marks, and everything needs to be eaten outside.  Am I right?  We are lucky enough to partner with Queen Creek Olive Mill, and in my mail a few weeks ago was a bottle of their amazing Fresh Crush Jalapeño Olive Oil.  I was having a hard time narrowing down the million ideas I came up with to use this oil, but I finally settled on these Grilled Shrimp Skewers with Jalapeño Chimichurri.  Quick, easy and delicious.  Try them for yourself!  Or better yet, make them for a friend-they will thank you!

Bacon Wrapped Jalapeño Poppers

Bacon Wrapped Jalapeño Poppers

I was originally going to bring you an ooey-gooey dessert this week.  And don’t worry, I will still bring you that particular deliciousness (after all it’s good to have something to look forward to, or so my parents always told me!) -but you’re going to have to wait until next week.  Instead I have a more savory treat for you.  Luckily for me (and now you), I had the most amazing gift brought to me this week.  My fabulous neighbor, Heather, brought me a windfall of vegetables from her inlaws’ cabin garden (find them at TheCabinGarden.com).  These jalapeños are just begging to be made into these Bacon Wrapped Jalapeño Poppers! (and if you have any good eggplant recipes, leave them in the comments below-please and thank you.)

A Moveable Feast: Creamed Jalapeño Spinach

July 11, 2017 By Lane 1 Comment

Creamed Jalapeno Spinach

Our epic 8 course dinner party (lovingly named A Moveable Feast) continues with this amazing Creamed Jalapeño Spinach.  Truth is, I’m a relative newbie when it comes to creamed spinach.  My initial thoughts when faced with creamed spinach were not terribly positive.  However after tasting it, I was immediately a convert.  Really, it’s heavenly!  But decide for yourself.  Since my obsession with creamed spinach involves great friends, a (now) destination brewery, and my culinary crush, you might just want to read more!

Chicken Tortilla Soup

Chicken Tortilla Soup

Yep, still winter here in Minneapolis.  Although we don’t have much snow and our temperatures are well above zero (which is actually balmy for this time of year) it is definitely still winter.  And this is the time of winter that I start going just a little crazy, dreaming about sunshine and warmer weather.  I do have a vacation coming up pretty soon, but in the meantime I’m just going to have make do with this Chicken Tortilla Soup.  Light yet packed with flavor, this soup will bring you just a little piece of summer….

Jalapeño Cheddar Cornbread

December 12, 2016 By Holly 1 Comment

Jalapeño Cheddar Cornbread

I don’t think it’s any secret around here that I’m totally obsessed with soup. I would happily eat soup (or stew or chili) every day, no matter the season or weather. I make quick soups on weeknights, long simmering soups and stews on the weekend and chili whenever the temp dips below 30 degrees. Over the years, I’ve found many recipes that I make again and again. One of my favorites (and a winter staple in my house) is my Chipotle and Stout chili recipe (find it here!). During the fall and winter, it’s on the menu weekly. I love to serve soups and stews with a great bread. I have a great beer bread recipe as well as Lane’s fantastic Parker House Rolls for soup and stew, but what I really wanted was a go-to cornbread recipe. Having never really found a recipe that I was head over heels for, I decided to make my own. I spent some time in the kitchen this fall testing out a ton of variations. After much trial and error, I came up with this recipe for Jalapeño Cheddar Cornbread. I hope you love it as much as I do!…
