Lemon Thyme Vinaigrette

I am a bit of a creature of habit and almost no where is that more evident than in my daily lunch choices when I’m home. I love to make big salads, full of whatever veggies I have in my fridge. The key to making salads really stand out is definitely the dressing. While I do love some store bought options (especially the ones by Salad Girl), I also love to make my own. Lately, I’ve had this Lemon Thyme Vinaigrette on repeat.

Making your own salad dressing really is just about one of the easiest things in the world. All you really need is good oil, an acid, some seasoning, and a jar. I came up with this simple Lemon Thyme Vinaigrette while up at Lane’s cabin this spring. We were testing a lentil dish (coming to the blog soon!) and the flavor I had in my head wasn’t really working out. We had an abundance of lemons and herbs that weekend, so I grabbed some mustard, a little thyme, a fresh lemon and got to work. About 2 minutes later, I had this delicious vinaigrette that was perfect with the lentils and has been on repeat all summer….

Lemon Rosemary White Bean Dip

Here in Minneapolis we finally saw our first 80 degree day.  Everyone flocked outside to take advantage of the amazing sunshine.  People congregated on driveways, at parks, around our 10,000+ lakes.  Just so dang happy to be outside!

But as the temperatures go up, and everyone gathers outside, snacks are needed.  Like this Lemon Rosemary White Bean Dip made with Fresh Crush Rosemary Olive Oil from the Queen Creek Olive Mill. Perfect for a summer gathering (or really ANY gathering).

Don’t trust me?  It’ll take you FIVE minutes to make it this delicious dip and you can see for yourself!

Lemon Cardamom Skillet Monkey Bread

Is there anyone out there who doesn’t love monkey bread? I mean, there is just something so dang good about about it. It’s a gooey, sugary, buttery carbohydrate filled brunch classic that I love to make and love to eat. Growing up, my mom often made it in a simple bundt pan, coating each piece of biscuit dough with plenty of butter, sugar, and cinnamon so that when it came out of the oven, it was like mini-cinnamon roll heaven. A few years ago, I started making it in my cast iron skillet. I loved the cripsy edges it created and really loved the easy clean up and presentation of the skillet. Recently, I decided to change up the bread itself and this Lemon Cardamom Skillet Monkey Bread was born.

Lemon Roasted Shrimp with Broccoli and Rice: A Sheet Pan Dinner

If you’ve been reading the blog for awhile, you may know that I’m a really big fan of one-pot and sheet pan style dinners. Like so many busy parents, I rely on a well tested rotation of weeknight dinner recipes to get through those busy weeks. My personal collection of go to recipes seems to have a common theme: they are all easy to prepare, don’t need fancy ingredients, and don’t make a huge mess (because, let’s face it, dishes are the least fun part of cooking!). Recently, I’ve been looking to add some new dishes to our rotation and with winter seemingly never ending around here, I wanted to get some more bright flavors onto our plates. Like most people, every now and then I get a craving for something slightly outside of my regular food rotation and I need to have it now. When I was pregnant with my daughter, those cravings involved milk (not something I typically love) and veggie subs (so random). This past weekend, I was sitting in my kitchen and looked over on the counter to see a whole bag of fresh lemons that I had picked up at Costco on a whim. I was suddenly struck by the feeling that I needed to have some lemon bread as soon as possible. As I dug out my go to recipe for quick breads, I realized that there was one big hurdle to my lemon bread dreams: I was out of butter. Now, as a food blogger and home cook, that was a major oops. And since my husband was out running errands and I was home with the kids, my choices were to either take the kids to Target for butter or get creative and make something up. Since I’d rather suffer the consequences of an unfulfilled dessert craving than brave the craziness that is Target on a Sunday afternoon, I opened up my fridge and got to work. Well, it’s been a crazy few days around here. As many of you know, Lane spent the last week in beautiful Phoenix, Arizona. In a fun twist of fate, we actually had booked overlapping trips and had great plans for a fun dinner out in the land of sunshine.
