I have gotten so many comments and questions lately on the Instant Pot. Yesterday this hilarious comment showed up on social media from my friend Dana, “So…I finally got an Instant Pot, and wouldn’t you know, the instructions said to have Lane come over and make something for you.” Although I laughed, and said that I would be SO happy to go over and make food for her (you can hold me to this, Dana!) this actually made this Friday’s Good Food Reads: Instant Pot really easy to write. Butternut Squash Noodles Alfredo
I’ve been craving vegetables lately, and that is a little odd. Although I was a vegetarian for a year or two, (many, many years ago), I can honestly say that vegetables are not anywhere on my cravings list (I won’t lie, that is the list that starts and ends with chocolate. And wine.) My local grocery store has started carrying spiralized vegetables and every time I go into the store I’m drawn to their amazing colors…and then I keep walking.
Truth be told I even OWN a spiralizer. And it’s never been out of the box. I own a cookbook to go with it (that I’ve never opened). All of that changed this weekend with these Butternut Squash Noodles Alfredo….
Thai Basil Pesto Noodles
Last summer I discovered a new favorite flavor-thai basil. This basil is a little different. It has more of a anise like flavor than the sweet Italian basil we are accustomed to here in the Midwest. If you’ve ever had Thai cuisine, chances are you’ve also had Thai basil. Thai basil is somewhat difficult to find outside of specialty stores here in the Twin Cities, so I decided to choose the easier way to keep it on my table-I grew it myself! Peanut Vegetable Noodles
Vegetables. A rainbow of vegetables of every color. To me these beautiful vegetables herald summer, and we’re all ready for that here in Minnesota! I’ve been trying to add more vegetables to the foods that my family has been eating as, I must admit, we have slipped into a rut over the winter.
