Lemon Rosemary White Bean Dip

Here in Minneapolis we finally saw our first 80 degree day.  Everyone flocked outside to take advantage of the amazing sunshine.  People congregated on driveways, at parks, around our 10,000+ lakes.  Just so dang happy to be outside!

But as the temperatures go up, and everyone gathers outside, snacks are needed.  Like this Lemon Rosemary White Bean Dip made with Fresh Crush Rosemary Olive Oil from the Queen Creek Olive Mill. Perfect for a summer gathering (or really ANY gathering).

Double Chocolate Olive Oil Brownies

The Whole30 is over for me, and although I am eating a much more healthy diet (give me all of the fruits and vegetables!) I am finding that a little indulgence goes a long way, and is SO needed from time to time.  Take these Double Chocolate Olive Oil Brownies for example.  Each brownie has a crackly top, a fudgy, chewy interior, and chocolate for days.  And they’re made with my secret weapon from Queen Creek Olive Mill!  Bet you can’t eat just one! Grilled Shrimp Skewers with Jalapeño Chimichurri

Summer is here and I just can’t stay away from the grill.  Seems like now that the weather is warm, everything needs grill marks, and everything needs to be eaten outside.  Am I right?  We are lucky enough to partner with Queen Creek Olive Mill, and in my mail a few weeks ago was a bottle of their amazing Fresh Crush Jalapeño Olive Oil.  I was having a hard time narrowing down the million ideas I came up with to use this oil, but I finally settled on these Grilled Shrimp Skewers with Jalapeño Chimichurri.  Quick, easy and delicious.  Try them for yourself!  Or better yet, make them for a friend-they will thank you!

Quick Glazed Orange Bread is the treat you’ve been looking for!  I made it again for my kids this weekend and then decided you might all want to make it as a treat for your kids.  Or your significant other.  Or make it for yourself. (what a gift!)

But if you’re making it for yourself, you may want to have someone else hide half of it where you can’t find it so you don’t eat all of it in one sitting. Or do eat all of it in one sitting. Trust me, we won’t judge.

Pork Chops with Pomegranate White Balsamic Pan Sauce

Pomegranate White Balsamic PorkAs a former vegetarian of nearly 16 years, I am still getting my feet wet in the land of cooking meat. Unsurprisingly, when I first started back into eating and cooking meat, chicken was frequently my go to animal protein source. Easy to prepare, readily available and generally a pretty healthy choice, it can be made a million different ways with sauces or spices which is great for home cooks of all experience levels. I’ve only recently come to realize that pork – and pork loin, in particular – is a similarly great option. A lean, easy to cook meat, it works well with tons of different flavors and is quick cooking for busy nights. I love center cut pork loin chops for weeknight dinners, particularly with a simple pan sauce. I’ve frequently used a basic balsamic vinegar to make a pan sauce and have loved it. So when our friends at Queen Creek Olive Mill sent us a bottle of their Pomegranate White Balsamic Vinegar, I just had to get in the kitchen and play! The result? Bacon Olive Oil Smashed Potatoes

I am a carb addict. It’s true. A few years ago, I tried to do the whole low-carb thing and let’s just say, I wasn’t a pleasant person for a while. I have no problems passing up a tray of sweets, but salty carbs? Don’t get in my way. That is especially true for roasted potatoes. I love them prepared just about any way, but these Bacon Olive Oil Smashed Potatoes are my new favorite thing. As some of you may know, we’ve partnered with Queen Creek Olive Mill in Arizona to feature some of their amazing oils and vinegars throughout the year. We have been long time fans of their amazing products and I make it a point to get out to the olive mill each time I’m in the Phoenix area (I have serious cravings for the prickly pear lemonade and the olive oil cupcakes!). They recently sent us some fun product to try and the first thing I couldn’t wait to use was their amazing Bacon Olive Oil.
