Lemon Thyme Vinaigrette

July 23, 2019 By Holly 2 Comments

I am a bit of a creature of habit and almost no where is that more evident than in my daily lunch choices when I’m home. I love to make big salads, full of whatever veggies I have in my fridge. The key to making salads really stand out is definitely the dressing. While I do love some store bought options (especially the ones by Salad Girl), I also love to make my own. Lately, I’ve had this Lemon Thyme Vinaigrette on repeat.

Making your own salad dressing really is just about one of the easiest things in the world. All you really need is good oil, an acid, some seasoning, and a jar. I came up with this simple Lemon Thyme Vinaigrette while up at Lane’s cabin this spring. We were testing a lentil dish (coming to the blog soon!) and the flavor I had in my head wasn’t really working out. We had an abundance of lemons and herbs that weekend, so I grabbed some mustard, a little thyme, a fresh lemon and got to work. Easy Slow Cooker Homemade Chicken Stock

March 12, 2019 By Lane Leave a Comment

Despite the groundhog sighting in early February, we’re still firmly in winter wonderland around here, with no sign of it letting up.  The snow is as high as we can pile it and we have so much, there isn’t a ton of room for any more.  Homemade soup tastes perfect when tired from playing outside in the snow, and lately I’ve been making a ton of delicious varieties!   The one thing they all have in common?  Easy Slow Cooker Homemade Chicken Stock!  It will blow your mind how easy this is to make, with ingredients that could really be considered “leftovers”!

Creamy Goat Cheese Polenta with Roasted Tomatoes and Crispy Mushrooms

October 23, 2018 By Lane Leave a Comment

Traveling through Italy this past month made me think hard about the foods I want to be eating.  The Italians were so amazing at taking seasonal, local foods and making them a meal.  Their food has a simplicity that is often lacking in our culture.  Polenta was a food that was on a lot of Italian menus and I happen to love it.  As soon as I got home, I started working on my new favorite fall comfort food, which I have been eating on repeat.  Creamy Goat Cheese Polenta with Roasted Tomatoes and Crispy Mushrooms.
