Although my Whole30 is done (how can you stick to Whole30 in Napa? I mean WINE…!), I am still trying to stick to clean eating while at home. I’m also trying to keep planning foods to bring to work. This Waldorf Chicken Salad ticks all of the boxes. Fresh, crunchy, creamy, Whole30 approved. Perfection!
With just a few ingredients, this Chicken Salad can make clean eating so satisfying.
I really like crunchy, so I add apples, celery, and cashews. I add onions for tang, and grapes for something a little sweet. Mix it all with some Whole30 compliant Mayo (here is the recipe I use), some lemon juice, and some salt and we have a winner.
Since I am always looking for foods that are easy to eat at work, I wrap this Waldorf Chicken Salad in a lettuce leaf and eat it as a wrap. Simple! This would also made the perfect sandwich for those people eating bread, or served with crackers!
Having a party? Serve lettuce wraps! Put out bowls of this Waldorf Chicken Salad, a homemade egg salad, and this cauliflower mixture. Put out a pile of lettuce leaves and let your guests make their own lettuce wraps! Healthy and a ton of fun!
Waldorf Chicken Salad (Whole30)
This Waldorf Chicken Salad is the perfect lunch-whether eaten with a fork, on a sandwich, or in a lettuce wrap!
Ingredients
- 1/2 cup mayonnaise (Whole30 compliant, or make your own!)
- 1 Tablespoon lemon juice
- 1/2 teaspoon salt
- 2 cups cooked shredded chicken shredded into bite sized pieces (a rotisserie chicken makes this EASY!)
- 1 cup grapes halved
- 1/2 cup apple diced
- 1/2 cup cashew pieces
- 1/3 cup celery diced
- 2 Tablespoons fresh basil chopped
- lettuce leaves, croissants, crackers for serving
Instructions

In a large bowl, combine mayonnaise, lemon juice, and salt.

Add chicken, grapes, apples, cashews, celery, and basil. Stir to combine.

Serve with lettuce leaves to make lettuce wraps, bread or croissants for sandwiches, or crackers for a delicious snack.
