Spinach Salad with Maple Dijon Dressing

An easy, nutritious salad with homemade maple dijon dressing.

For the Salad:

  • 1 small container baby spinach
  • 6 ounces goat cheese
  • 1/4 cup shelled pistachios
  • 1 small shallot, thinly sliced
  • 1/4 cup dried blueberries
  • 1 recipe Maple Dijon Dressing (see below)

For the Dressing

  • 6 Tablespoons olive oil
  • 2 Tablespoons apple cider vinegar
  • 1 Tablespoon dijon mustard
  • 1 teaspoon maple syrup
  • 1/2 teaspoon kosher salt
  • 1 Tablespoon minced shallot


For the Dressing

  1. In the bowl of a high speed blender, combine all the ingredients and blend until light and creamy. 

    Option: for a less creamy/thick version, whisk all ingredients together in a small bowl and allow flavors to combine for 15-20 minutes before serving.

For the Salad:

  1. In a large bowl, gently mix the spinach, shallot, blueberries, and pistachios.

  2. Add enough dressing to lightly coat, and toss to combine. 

  3. Top with goat cheese crumbles and serve immediately.
