Asparagus with Pistachio Citrus Gremolata

Ingredients

For The Asparagus

  • 1 bunch fresh asparagus, woody ends trimmed off
  • 1 Tablespoon fresh squeezed orange juice
  • 2 Tablespoon olive oil
  • salt and pepper, to taste

For The Gremolata

  • 1/2 cup chopped parsley
  • 2 Tablespoons orange zest
  • 1/4 cup roasted and salted pistachios, chopped
  • 1 medium clove garlic, minced

Instructions

For The Gremolata

  1. In a medium bowl, combine the parsley, garlic, zest, and pistachios. Stir to combine and set aside to allow the flavors to blend.

For The Asparagus

  1. Line a baking sheet with parchment paper or foil. Preheat your oven to 425 degrees F. 

  2. In a small bowl, combine the fresh orange juice and olive oil. Mix together and season with salt and pepper to taste. 

  3. Toss the asparagus with 2 Tablespoons of the orange-olive oil mixture and spread the spears out on the prepared baking sheet.

  4. Bake for 12-15 minutes, until just roasted. Top with the Gremolata and season with additional salt and pepper to taste. Serve immediately.
