Salted Peanut Brittle with A Hint of Lime

An easy salty-sweet treat!

Ingredients

  • 1 cup granulated sugar
  • 1 generous teaspoon kosher salt plus more for sprinkling
  • 1/4 cup water
  • 3 Tablespoons fresh lime juice
  • 1 cup lightly salted peanuts

Instructions

  1. Prepared a baking sheet by coating with a light layer of room temperature butter, set aside.
  2. In a wide mouth sauce pan, combine sugar, kosher salt, and water.
  3. Cook on medium high heat, stirring occasionally, until the sugar is dissolved and a deep amber color is just beginning (approximately 300 degrees on a candy thermometer).
  4. Remove from the heat and quickly stir in the lime juice.
  5. Add the peanuts and stir to coat.
  6. Turn the mixture out onto the prepared baking sheet and spread into a layer of desired thickness.
  7. Sprinkle with additional kosher salt.
  8. Allow to cool and break into bite sized pieces.
