Rhubarb Muffins

Old fashioned cake muffins studded with tart rhubarb.

Ingredients

  • 1 1/4 cup brown sugar
  • 1 egg
  • 2/3 cup canola oil
  • 1 teaspoon vanilla
  • 1 cup buttermilk
  • 2 3/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 teaspoons cinnamon divided
  • 2 cups diced rhubarb
  • 1/2 cup sugar
  • 2 tablespoons melted butter

Instructions

  1. In a large bowl, combine the brown sugar, egg, and oil. Mix well to combine.
  2. Add the vanilla and buttermilk and mix again.
  3. Slowly add the flour, baking soda, salt, and 1 scant teaspoon of the cinnamon. Mix until just incorporated.
  4. Stir in the rhubarb.
  5. Pour the batter into prepared muffin tins.
  6. In a separate bowl, mix together the melted butter, sugar, and remaining cinnamon.
  7. Sprinkle on top of the muffins.
  8. Bake at 350 degrees for 25-30 minutes.
