BBQ Bacon Cheeseburger

A juicy, flavorful burger with all of the fixings.

Ingredients

  • 3 pounds ground beef
  • 3 Tablespoons ketchup
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Tabasco
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 2 shallots peeled and thinly sliced
  • 1 teaspoon olive oil
  • 12 brioche buns sliced in half
  • 12 thin slices of sharp cheddar cheese
  • 12 pieces of bacon cooked and broken in half

Instructions

  1. Preheat your grill to 450ºF.
  2. In a large bowl, mix ground beef, ketchup, Worcestershire sauce, Tabasco, pepper, garlic powder, onion powder and salt.
  3. Form into 12 patties and lay out on a baking sheet lined with parchment paper.
  4. Push a shallow thumbprint into the middle each of patty. Set aside.
  5. Heat a teaspoon of olive oil in a cast iron skillet.
  6. Place the sliced shallots into the hot oil and cook on low heat stirring infrequently, but enough so that they don't burn.
  7. Once the shallots reach a slightly darker color and become soft and pliable (about 15-20 minutes), remove them from the heat. Set aside.
  8. Place the burger patties on the grill (direct high heat) and grill for 3-4 minutes per side with the grill cover down.
  9. Place the cheese over the burgers for the last minute of cooking, to melt the cheese onto the burger.
  10. Remove the burgers from the grill and let them sit for 10 minutes.
  11. Place the sliced buns, cut side down, onto the hot grill for 30 seconds to a minute until slightly browned.
  12. Place a burger into the bun, piling bacon, shallots, and BBQ sauce on top.
