Lemony White Beans

This is a flavorful yet simple appetizer or side dish. If you can't find pecorino, parmesan cheese will do.

Ingredients

  • 1 15 ounce can cannelini beans drained and rinsed
  • 1/4 cup red onion minced
  • 1/4 cup pecorino cheese grated + additional for garnish
  • 1 Tablespoon lemon zest
  • 3 Tablespoons lemon juice
  • 3 Tablespoons olive oil
  • 2 Tablespoons fresh rosemary minced
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a medium sized bowl, combine lemon zest, lemon juice, olive oil, rosemary, red pepper flakes, salt and pepper.
  2. Add white beans, onions and pecorino and coat with the lemony marinade.
  3. Store in a glass container in the refrigerator overnight.
  4. Place into a serving dish and garnish with additional pecorino.
