Roasted Chicken with Romesco

An easy weeknight dinner! Roasted chicken thighs with a flavorful Spanish inspired rub are perfect with our romesco sauce.

Spice Rub

  • 1.5 teaspoons kosher salt
  • 1 teaspoons smoked paprika
  • 1 teaspoon garlic powder


  • 2 pounds boneless chicken thighs
  • Olive Oil
  • 1 cup prepared Romesco Sauce


  1. Preheat the oven to 400 degrees. Line a baking sheet with foil. 

  2. In a small bowl, add the salt, paprika, and garlic powder. Stir to combine. 

  3. On a lined baking sheet, place the chicken thighs and gently pat them dry.

  4. Drizzle the chicken with olive oil just to coat. 

  5. Using half the spice rub, sprinkle the mixture evenly over the chicken. Turn the chicken over and sprinkle with the remaining spice rub. 

  6. Roast for approximately 20-25 minutes, or until just cooked through. Remove from the oven and allow to rest for a few minutes. Top with your prepared romesco sauce and serve immediately.
