Ingredients

Grilled Buffalo Chicken Salad

  • 3 chicken breasts
  • 1/4 cup Buffalo sauce + extra for drizzling (I use Frank's Buffalo Sauce)
  • 5 ounces salad greens
  • 1 cucumber, sliced thinly
  • 1/2 cup radishes, sliced thinly
  • 1 cup tomatoes, halved
  • 1/2 cup blue cheese crumbles
  • 2 Tablespoons chives, chopped

Blue Cheese Dressing

  • 1 cup Greek yogurt
  • 1/2 cup buttermilk
  • 2 Tablespoons mayonnaise
  • 1 Tablespoon white wine vinegar
  • 4 ounces blue cheese crumbles
  • 1/2 teaspoon salt

Instructions

Blue Cheese Dressing

  1. Combine Greek yogurt, buttermilk and mayonnaise in a small bowl.  Add white wine vinegar, blue cheese crumbles and salt.  Mix well.

  2. Transfer dressing to glass container and allow to rest in the refrigerator for at least 30 minutes.

Grilled Buffalo Chicken Salad

  1. Place chicken and buffalo sauce into a ziplock bag.  Marinade for 30 minutes.  Remove chicken from the bag and discard bag and left over buffalo sauce.

  2. Grill chicken over medium-high heat for approximately 3 minutes per side or until temperature reaches 160°F. Remove from grill and allow chicken to rest for 10 minutes.

  3. On a platter, heap salad greens.  Mound blue cheese crumbles in the center of the salad greens.  Arrange cucumber slices, radish slices, and tomatoes.

  4. Slice grilled buffalo chicken and arrange on salad greens.  Drizzle additional buffalo sauce over chicken.  Sprinkle salad with chopped chives. Serve salad with Blue Cheese Dressing.

Go ahead and add any other vegetables you like!
