Vanilla Cardamom Waffles

Light and fluffy waffles with a hint of vanilla and cardamom.

Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/4 teaspoons ground cardamom
  • 1 Tablespoon cornmeal
  • 1/2 Tablespoon sugar
  • 1 cup sour cream
  • 1 cup milk
  • 6 Tablespoons butter melted and slightly cooled
  • 4 eggs separated
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 Tablespoons honey

Instructions

  1. In a large bowl, gently whisk together the dry ingredients (flour, baking powder, baking soda, salt, cardamom, cornmeal, and sugar) and set aside.
  2. In another large bowl, melt the butter and let cool slightly.
  3. Combine the egg yolks, sour cream, milk, and butter and whisk gently to combine.
  4. Mix in the vanilla and honey.
  5. Using an electric or stand mixer, beat the egg whites until soft peaks form.
  6. Slowly fold the wet ingredients into the dry ingredients and then gently fold in the egg whites.
  7. Do NOT over mix the batter!
  8. Coat your waffle iron with nonstick spray or butter and cook the waffles until just golden brown and slightly crisp on the outside.
