Bourbon Bacon Meatloaf

These are flavorful individual meatloaves that were moist and flavorful, thanks to a whole lot of vegetables and an amazing bacon studded jam. These will also make your house smell wonderful when you are reheating the leftovers-if there are any leftovers to reheat!

  • 2 slices of bread processed in food processor to make bread crumbs
  • 1 shallot finely chopped
  • 1 onion finely chopped
  • 3 carrots finely chopped
  • 2 stalks of celery finely chopped
  • 1 Tablespoon olive oil
  • 1 1/2 teaspoons salt divided
  • 1/2 teaspoon ground pepper divided
  • 2 pounds ground beef
  • 1 Tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • 1 1/2 teaspoons Dijon mustard
  • 2 Tablespoons Worcestershire sauce
  • 1/2 cup milk
  • 1/2 cup Italian parsley finely chopped
  • 1 Tablespoon fresh thyme leaves
  • 2 eggs

  1. Preheat oven to 350ºF.
  2. Place onions, shallot, carrot and celery into the bowl of a food processor and pulse until minced.
  3. In a large skillet, heat olive oil over medium heat.
  4. Add vegetables and sauté until they are soft and beginning to brown, approximately 10 minutes.
  5. Season with 1/2 teaspoon of salt and 1/4 teaspoon of pepper.
  6. Add vegetables to a large mixing bowl.
  7. Add breadcrumbs to vegetables and combine.
  8. Add remaining ingredients (1/2 teaspoon salt, 1/4 teaspoon pepper, ground beef, tomato paste, smoked paprika, Dijon mustard, Worcestershire sauce, milk, parsley, thyme, and eggs).
  9. Mix the ingredients well (it is easiest to use your hands for this part).
  10. Set the mixture in the refrigerator for 15 minutes.
  11. Drain half of the liquid in the bowl, and mix the remaining liquid back into the meat mixture.
  12. Divide the mixture into 12 individual meatloaves, each approximately 3 inches.
  13. Place the meatloaves into a baking dish.
  14. Check at 25 minutes-if excess liquid has accumulated in the baking dish, drain and place back into the oven.
  15. Bake until cooked through, approximately 30-35 minutes.
  16. Remove from oven and allow to sit for 5 minutes.
  17. Top each meatloaf with 1-2 Teaspoons of Bourbon Bacon Jam.
  18. Serve and enjoy!
