  • 1.5 pounds Brussels sprouts cut lengthwise
  • 2 Tablespoons Queen Creek Arizona Valencia Olive Oil
  • 2 Tablespoons fresh orange juice
  • 2 teaspoons maple syrup
  • 1/2 tsp kosher salt
  • 1 large shallot (sliced into rings) approx. 3 Tablespoons
  • 1 Tablespoon orange zest
  • 1 Tablespoon pomegranate seeds


  1. Preheat oven to 425°F.

  2. In a large bowl whisk olive oil, maple syrup, and salt.

  3. Pour brussels sprouts and shallot rings into the bowl and toss until well coated.

  4. Place vegetables on a sheet pan (no parchment paper) and make sure all of the brussels sprouts are cut side down. Roast for 25-30 minutes until browned.

  5. Pour into a serving bowl and garnish with pomegranate seeds and orange zest.
