Ingredients

  • 1 dozen large eggs
  • 1/4 cup Sun Dried Tomatoes, chopped I prefer to tomatoes not packed in oil, but either will work here
  • 1/2 cup feta, crumbled
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon dried oregano
  • 1/2 cup chopped frozen spinach, thawed and patted dry
  • fresh ground pepper, to taste

Instructions

  1. Preheat the oven to 350 degrees F

  2. Generously coat a 12 cup muffin tin with cooking spray

  3. In a large bowl, whisk together the eggs, salt, pepper, and oregano.

  4. You can choose to now divide the egg and spice mixture into the muffin cups and sprinkle each cup with equal amounts of feta, tomato, and spinach OR feel free to toss the remaining ingredients into the bowl, give it a good mix, and divide the mixture into the muffin tin.

  5. Bake the egg bites at 350 degrees for 15-17 minutes or until just set.

  6. Enjoy! The egg bites will keep in the fridge for 3-5 days or in the freezer for up to 2 months.
