Maple Dijon Roasted Sweet Potatoes

  • 2 large sweet potatoes, peeled and diced bite sized pieces
  • 2 Tablespoons dijon mustard
  • 2 Tablespoons white balsamic vinegar
  • 1 Tablespoon olive oil
  • 1 Tablespoon maple syrup
  • 1 teaspoon kosher salt


  1. Line a rimmed baking sheet with parchment paper

  2. In a small bowl, slowly whisk together the mustard, vinegar, maple syrup, and olive oil.

  3. Place the diced sweet potato in a large bowl. Drizzle with the maple syrup mixture and toss well to combine.

  4. Place the coated sweet potato pieces on a rimmed baking sheet and season with 1 teaspoon kosher salt and a few grinds of fresh cracked pepper.

  5. Bake at 425 degrees for 30-45 minutes, stirring approximately every 15 or 20 minutes, until just golden.
