Almost Fancy Roasted Potatoes

  • 2 pounds yellow potatoes, rinsed and gently scrubbed
  • 1 Tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • fresh cracked pepper, to taste
  • 1 Tablespoon grated parmesan


  1. Preheat your oven to 350 degrees.

  2. Using a sharp knife or mandoline, thinly slice approximately 2 pounds of yellow potatoes.

  3. In a large bowl, toss the potato slices with olive oil to coat well.

  4. Add the salt, pepper, and garlic powder to the potatoes and toss to coat.

  5. Place the potato slices in two long stacks in your prepared baking pan (I used a 10.5 x7 " Le Creuset pan) and cover loosely with foil.

  6. Bake x 45-60 minutes, until tender. If crispy edges are desired, place potatoes (uncovered) under the broiler for a few minutes until just golden. Serve immediately.
