Apple French Toast Bake

This is a delicious make ahead breakfast dish tasty enough to serve at a fancy brunch. Serve alone or with applesauce or maple syrup.

Ingredients

  • 1 loaf of artisan bread I use Challah or Italian bread
  • 8 eggs
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup sugar
  • 2 Tablespoons vanilla
  • 2 teaspoons cinnamon divided
  • 2 apples finely diced
  • 1/2 cup butter cut into pieces + extra for greasing the baking dish
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Grease a 9x13 inch baking dish with butter.
  2. Tear loaf of bread into small, bite sized pieces and place into baking dish.
  3. Sprinkle diced apples among the bread pieces.
  4. In a large bowl, whisk together eggs, milk, cream, vanilla, sugar and 1 teaspoon of cinnamon.
  5. Pour egg mixture over pieces of bread in baking dish.
  6. In a small bowl, using a fork or pastry blender, combine flour, brown sugar, remaining 1 teaspoon of cinnamon, nutmeg, salt and cold butter until a pebbly mixture .
  7. Pour crumbly topping mixture over top of baking dish.
  8. Cover with foil and place into the refrigerator overnight.
  9. When ready to make french toast bake, preheat oven to 350ºF.
  10. Take baking dish out of the refrigerator and allow to warm up for 10 minutes.
  11. Place foil wrapped baking dish into preheated oven.
  12. Bake for 30 minutes.
  13. Remove foil and continue to bake for an additional 30 minutes.
  14. Allow to cool for 10 minutes.
  15. Slice and serve.
