Instant Pot Herbed Cauliflower Mash

Ingredients

  • 1 medium-large head cauliflower, cut into quarters
  • 1 cup water
  • 2 ounces herb goat cheese
  • 1/2 teaspoon kosher salt
  • fresh ground pepper to taste
  • fresh herbs, to taste

Instructions

  1. Place 1 cup of water in the bottom of the instant pot. Tuck the silicone steamer basket in the IP above the water.

  2. Remove the outer leaves and core from the cauliflower and cut it into quarters.

  3. Place the cauliflower in the steamer basket and set the IP to manual pressure.

  4. Cook on High Pressure for 1 minute, then natural pressure release.

  5. Drain the water from the pot, then return the cauliflower directly into the pot.

  6. Add the goat cheese, salt, and pepper.

  7. Using an immersion blender, mash together until smoother.

  8. Adjust seasoning to taste. Sprinkle with fresh herbs.

  9. Serve immediately
