One Pot Pasta with Tomato, Spinach, and Mozzarella

A one-pot dinner wonder filled with whole grains, spinach, mozzarella and ground beef.

Ingredients

  • 1 tablespoon garlic olive oil alternatively, add one clove chopped garlic to your beef mixture
  • 1 cup chopped onion
  • 1 lb lean ground beef
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon Italian seasoning
  • 1 1/4 cups chicken stock
  • 1 can 14 ounces tomato sauce (try fire roasted if you like some heat!) or crushed tomatoes
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 to 3/4 teaspoon red pepper flakes depending on taste
  • 8 ounces uncooked whole grain pasta
  • 5 ounces about one package fresh baby spinach
  • 1 cup shredded mozzarella

Instructions

  1. In a large ovenproof skillet or pan, heat your olive oil on medium-high.
  2. Add the chopped onion (and garlic, if using) and sauté 2-3 minutes.
  3. Add the beef, oregano, and Italian seasoning and cook 3-5 minutes, until the beef is crumbled.
  4. In the same pot, combine your stock, tomatoes, salt, pepper, and red pepper flakes. Bring the mixture to a boil.
  5. Cover, reduce the heat to a simmer, and cook for 12-15 minutes, or until your pasta is done (do not over cook!).
  6. Stir in the spinach until just wilted.
  7. Sprinkle with mozzarella cheese and place under the broiler for 1-2 minutes, until the cheese is just melted.
  8. Serve and enjoy!
