Slow Cooker Southwest Chicken Bowls

An easy but delicious weeknight dinner!

Ingredients

  • 4 chicken breasts
  • 15 ounces salsa (I use Tostitos medium salsa, which comes in a 15 ounce jar)
  • 1 packet taco seasoning (1.25 ounces) (I use Ortega)
  • 15 ounces black beans, drained and rinsed
  • lettuce, tomatoes, red onion, shredded cheese, avocado, tortilla chips, sour cream, cilantro for making the bowls

Instructions

  1. Place chicken breasts on the bottom of a 6 quart slow cooker.

  2. Pour black beans, taco seasoning, and salsa over the chicken breasts.

  3. Cook on low for 4 hours or until chicken is done.

  4. Using 2 forks, shred the chicken in the slow cooker, combining with the beans and salsa as you shred.

  5. Assemble bowls with southwest chicken and whatever accompaniments you like (lettuce, tomatoes, red onion, shredded cheese, avocado, tortilla chips, sour cream, cilantro)

Recipe Notes

The kcal listed are for one portion of the southwest chicken.  Final kcal count will depend on which accompaniments you choose to create your bowl.
