Author Adapted from a Recipe from Ree Drummond (The Pioneer Woman!)
-
1 28
ounce
can of peeled tomatoes
-
2 10
ounce
cans of diced tomatoes with chiles
-
1
cup
rough chopped onion
-
1
large clove garlic
-
1
jalapeño
sliced and seeded for a mild salsa, leave seeds in for a spicier salsa
-
1/4
teaspoon
sugar
-
1/4
teaspoon
salt
-
1/4
teaspoon
cumin
-
1
cup
cilantro leaves
loosely packed (you can add more or less to taste-I happen to be a great fan of cilantro!)
-
1/4
cup
lime juice
-
Throw onion, garlic and jalapeño into the bowl of a food processor (use 12 cup or larger as this recipe makes a large amount of salsa).
-
Pulse 3-4 times until finely chopped
-
Add tomatoes (both whole and diced). sugar, salt, and cumin.
-
Pulse until your preferred texture (I prefer my salsa fairly smooth).
-
Add cilantro and lime juice.
-
Pulse 3-4 additional times until cilantro well distributed.
-
Serve with chips and enjoy!
