Ingredients

  • 4 eggs lightly beaten
  • 1 cup vegetable oil
  • 2/3 cup cold water
  • 1 can 15 oz pure pumpkin puree
  • 3 cups sugar
  • 3 1/3 cup flour
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 1/2 teaspoon kosher salt

Instructions

  1. Preheat an oven to 350 degrees F.
  2. Grease two standard loaf pans and set aside.
  3. In a large bowl, whisk together the eggs, oil, water, and pumpkin until smooth.
  4. Sift together the dry ingredients and fold into the pumpkin mixture until just combined.
  5. Divide the batter between the two greased loaf pans.
  6. Bake at 350 degrees for one hour, or until a toothpick inserted comes out clean.
  7. Allow to cool on a cooling rack.
  8. Slice and enjoy!
